Setting a default value to a form field

Hi all. Quick question that has been bugging me. How can I set a default value to a pulldown field in a form. Here is my field:

At the moment, the visible option is the last one. But if no option is chosen then nothing is outputted. I would like a default option to be outputted if nothing is selected.

Any help would be much appreciated.
