I have found only one file to replace

My downloaded: jquery-ui-1.7.2.custom.min.js 189KB
I am not satisfied with this solution. This is core files change.
Is it possible to put this file in mod/theme_mytheme/.../.../... ?

If you override this with your own header.php, you call code include for the JQuery from anywhere you like
e.g.
<script type="text/javascript" src="<?php echo $vars['url']; ?>MyDomain.com/MySpecialLib/MyVendorsMyJQuery/jquery-ui-personalized-1.5.3.packed.js"></script>

So I have this same question. The jquery-ui-1.7.2.custom.min.js file included in the core must contain the UI core. Because of this it looks like we need to replace it entirely (making sure I include any feature the the core is using). As Dhrup mentioned this is done easily by overriding the header.php file.
However it doesn't look like the CSS file that jqueryUI provide was included in the vendors directory and doesn't ever seem to get loaded independently in the header.php file. Does anyone know where it went or how they implemented that piece (or what UI theme, if any, they chose to create the custom UI download)?
Elgg 1.7 will have the entire jQuery UI included in /vendors/ (at least it is in the svn repository)
I haven't seen any information about jQuery UI themes.
jQuery UI themes are really different from the whole Elgg theme system. We've looked at it but I think it is much better to stick with Elgg. I
@daniel: I would not recommend to change the header.php... better to use some metatag.php include. If you go to 1.7 you can just comment that include out.
